Non-Guilty Pleasures | Vegan, Healthy ‘Sloppy Joe’s’

Sweet and Oh-So-Simple, this vegan ‘Sloppy Joe’s’ mimic is as mouthwatering as it is nutritious.

All raw, natural ingredients, this will definitely become your go-to meal to make when friends are over. Perfect on these summer evenings when everyone is tucking into burgers and hot dogs galore. Trust me, you definitely won’t feel like you are missing out!

For the “meat” you will need:

3 Grated Carrots

Half a grated small sweet potato

Half an onion, cut into half-moons

For the Homemade BBQ relish:

12 cherry tomatoes

1 tbsp soy sauce/ tamari

agave/honey

Other half of your onion

Clove of garlic

2 tsp Tomato Puree

½ Ripe avacado

Spices:

paprika

oregano

cinnamon

garlic

salt

pepper

apple cider vinegar

lime juice

How To Make…

Simply roast your grated carrots, grated sweet potato and half an onion with a drizzle of honey for about 25 minutes. Mix it around every 5 minutes or so to make sure the edges don’t catch.

While this is roasting, chuck all of the relish ingredients into a food processor. The avocado is optional, but I find it helps soften the BBQ sauce, making it slightly creamier in texture. And also because… avocado.

Set half of your mixture aside, and half into a container.

Combine your “meat” mixture in a bowl with the other half of your relish and mix. One secret ingredient I sometimes add is some whole-food baked beans. This gives it even more ‘sloppiness’ as well as some good proteins!

Next, you can toast whichever bread you wish, and build your plant based burger. I sometimes like to eat this mixture with grain crackers for a healthy snack, or make BBQ salad taco shells #healthrightthere.
